Healthy Blueberry Muffins

Blueberry Muffins are certainly one of my favourite desserts, and I could eat them every day. However, they are usually quite high in sugar and saturated fats, therefore, I have created these amazing healthier version.

Preparation Time: 10 mins

Cooking Time: 25 mins

Total Time: 35 mins

Portions: 12 muffins

 

Ingredients


4 medium bananas

80 ml sunflower oil

100 ml maple syrup

60 ml oat milk

210 g flour

25 g rolled oats

1 tsp baking powder

1 tsp baking soda

1 pinch salt

1/2 tsp cinnamon

150 g blueberries


 

Method


1. Preheat the oven to 180°C.


2. Mash the bananas using a fork.


3. Mix the mashed bananas with sunflower oil and maple syrup. Add the flour, baking powder, baking soda, salt and cinnamon. Stir in the milk, and last add the rolled oats and blueberries.


4. Divide the dough onto 12 muffin forms. Sprinkle with some rolled oats and bake for 20-25 minutes.
