Apple Carrot Salad

This salad is super refreshing, and the perfect combination of fruit and vegetables. The dressing is completely free of oil and you can adjust the fat content by choosing fat-free yoghurt.

Servings: 4-6 people

 

Ingredients


1 kg carrots

2 apples

300 g yoghurt

1/2 - 1 lemon (juice)

1 tsp honey

1 handful parsley

salt

pepper

 

Method


1. Peel the carrots and apples, and finely grate them.


2. Finely chop the parsley.


3. Mix the yoghurt, lemon juice, chopped parsley and honey. Season with salt and pepper.


4. Pour the dressing over the grated carrots and apples, and stir well.
