This is a really easy recipe, and probably more an idea with which ingredients you can combine beetroot. The perfect lighter lunch for the winter season.

Ingredients
2 medium beetroot bulbs
2 oranges
2 tbsp olive oil
40 g walnuts
fleur de sel
pepper
rosemary
Method
1. Slice the beetroot very finely (or you can also grate them).
2. Fillet the oranges and add them to the beetroots. Squeeze the juice out of the remaining orange and pour over the beetroot.
3. Add olive oil, salt, pepper, and some rosemary to the beetroot. Stir well and refrigerate for 1 hour.
