Hummus with Roasted Tomatoes


This is the creamiest hummus you will ever have! The juice of the roasted tomatoes gives it so much flavour and makes it the perfect summer appetiser. Serve it with some fresh baguette, crackers or vegetable sticks.

Total Time: 35 mins

Portion: 1 small bowl

 

Ingredients


250 g cherry tomatoes

5 stalks fresh thyme

½ tsp smoked paprika powder

1 tin chickpeas

25 ml olive oil

50 g tahini

60 ml ice cubes/cold water

1 tsp garlic powder

salt

 

Method


  1. Preheat the oven to 200 °C.

  2. Put the cherry tomatoes with the fresh thyme in an ovenproof dish and drizzle with some olive oil and salt. Roast for 25 minutes.

  3. Put the chickpeas, tahini and garlic powder into a food processor. Mix until smooth. Gradually add the 25 ml olive oil and ice cubes/cold water. Season to taste with salt. Transfer to a bowl and garnish with the roasted tomatoes and smoked paprika powder.
