I genuinely love these Christmas cookies as they are a little bit chewier on the inside and they have an amazing taste of cinnamon. The recipe is very easy and you don't need many ingredients.

Ingredients
2 egg whites
500 g ground almonds
300 g powdered sugar
2 tsp cinnamon
1 pinch salt
Frosting:
125 g powdered sugar
1 egg white
Method
1. Mix the egg whites, ground almonds, powdered sugar, cinnamon, and salt, and form a firm dough. Let rest for 15 minutes.
2. Meanwhile make the frosting, mix the powdered sugar with the egg white.
3. Preheat the oven to 170°C.
4. Roll out the dough 1-1.5 cm thick, and poke stars out of the dough.
5. Coat the star cookies with some frosting and bake for 12-15 minutes.
