Two of the best things ever combined into one: Banana Bread Cookies. They are super soft and chewy in the middle, and crisp and golden-brown on the outside. These are absolutely delicious, done in under 25 minutes and you will become obsessed straight away!

Servings: 10-12 cookies
150 g flour
1 tsp baking powder
100 g sugar
(Adjustable to 75 g depending on the sweetness of the banana)
80 g vegan butter, melted
1 ripe banana, mashed
1 tbsp nut butter
1 tsp ground cinnamon
50 g dark chocolate, chopped
50 g walnuts, chopped
1 pinch salt
Preheat the oven to 180 °C.
Melt the vegan butter and let cool slightly. Using a fork, mash the banana into puree.
Put all the dry ingredients into a bowl. Add the mashed banana, melted butter, cinnamon, salt and nut butter. Stir until just combined.
Fold in the chopped walnuts and dark chocolate. Put in the refrigerator for 15 minutes.
Line a baking tray with baking paper. Drop rounded tablespoons of cookie dough onto the prepared baking tray, spacing them about 5 cm apart to allow for spreading.
Bake the cookies in the oven for ca. 12 minutes until the edges are golden brown.
Remove from the oven and let the cookies cool on the baking sheet for a few minutes. Then transfer them to a wire rack to cool completely.
