This courgette soup is incredibly creamy due to the cashew nuts, and is super easy to make. Serve it with fresh bread or my courgette tart if you want to have a fancy starter.

Servings: 4 people
Ingredients
650 g courgette
2 garlic cloves
1/2 onion
1 medium potato
50 g cashews
1 tsp garam masala powder
1 tsp curry powder
1 tsp ground nutmeg
1 tsp cumin
750 ml vegetable stock
2 tbsp apple cider vinegar
1 handful fresh parsley
1/2 handful fresh lovage
salt
pepper
Method
1. Roughly chop the courgette, onion, potato, garlic cloves and fresh herbs.
2. Heat some olive oil in a large pot, fry the vegetables for 3-5 minutes. Add the spices, herbs and cashew nuts, and fry for another 2 minutes. Deglaze with apple cider vinegar and veggie stock. Let simmer for 35 minutes.
3. Blend the soup until it very creamy, season to perfection with salt and pepper.
