This dal is super easy and full of plant-based protein. Feel free to add other veggies or tofu, and serve it with some fresh naan bread, rice and mango chutney. Delicious!

Ingredients
15 g frischer Ingwer
5 spring onions
2 garlic cloves
1 carrot
3 tsp curry powder
1/2 tsp ground turmeric
2 tsp tomato paste
150 g red lentils
1 tin coconut milk
200 ml vegetable stock
1 tbsp maple syrup
salt
pepper
fresh cilantro (optional)
Method
1. Peel the ginger and grate it. Slice the spring onions and finely chop the garlic and carrot.
2. Heat some sunflower oil in a pan and fry the vegetables for 3-5 minutes. Add the spices and tomato paste, and fry for another minute. Rinse the lentils under cold water and add to the pan. Deglaze everything with coconut milk and vegetable stock. Let simmer covered for 15-20 minutes until the lentils and carrots are cooked.
3. Add the maple syrup and season to perfection with salt and pepper. Top with fresh cilantro if desired.
