Figs are my favourite fruit ever and can be combined with savoury ingredients such as different kind of cheese or sweet ingredients in a porridge. You could also use blue cheese or feta if you do not like goat cheese.

Ingredients
Dressing:
1 tsp mustard
1/2 tsp fig jam
1 tbsp rapeseed oil
2 tbsp olive oil
1 tbsp quince or apple vinegar
1 tbsp cold water
Salad:
100 g lamb lettuce
2 slices of cabbage
2 figs
20 g walnuts
2 crottins de Chavignol
4 slices of bread
Method
1. Mix all the ingredients for the salad dressing in a large salad bowl. Season to perfection with salt and pepper.
2. Roast the walnuts in a pan without oil until they are golden brown, save for later.
3. Wash the lamb lettuce and finely chop the cabbage. Add both to the dressing into the large salad bowl.
4. Cut the figs into cubes or into slices and put them on top of the salad. Add the walnuts as well.
5. Toast the bread slices and evenly top with the goat cheese. Turn on the grill function of the oven and let the cheese melt for 2-5 minutes.
6. Mix the salad until all the veggies are covered with dressing and serve with the goat cheese toasts.
