So simple, yet so delicious and an easy way to get in lots of vitamins, healthy fatty acids and plant-based protein! I prefer to use a more special hummus, such as roasted pepper or harissa hummus, which are my favourites, but you can also use a classic hummus or even make your own. The perfect sandwich for your lunch break at work, uni or school.

Ingredients
2 long bread rolls (demi-
baguettes)
1/2 aubergine
1 small courgette
1 red pepper
20 g salad leaves
20 g pine nuts
100 g hummus (e.g. roasted pepper hummus)
Method
1. Cut the aubergine and courgette into slices of about 0.5-1 cm, and the red pepper into slices of about 3 cm. Heat some olive oil in a grill pan (you can also use a normal pan but you will not get the grill patterns), and fry the veggies for around 3 minutes on each side until they are cooked through.
2. Cut the bread rolls/demi-baguettes and grill them for 2 minutes in the oven or on top of a toaster.
3. Spread the hummus on one side of the bread roll/demi-baguette and top with pine nuts, salad leaves and the roasted veggies.
