This goulash is incredibly yummy and the jackfruit is perfect to replace the long-cooked meat. I would suggest to serve it with some homemade or bought "Spätzle".

Ingredients
2 tins jackruit in water
1 red onion
2 garlic cloves
300 g potatoes
1 medium carrot
2 red peppers
1 tbsp tomato paste
2 tbsp sugar
125 ml red wine
800 ml vegetable stock
2 tsp dried marjoram
2 tsp smoked paprika powder
2 tsp paprika powder
2 bay leaves
1 pinch chilli flakes
2 tbsp fresh parsely (chopped)
salt
pepper
Method
1. Finely chop the onion and garlic. Peel the carrot and the potatoes and cut into small cubes. Cut the red peppers into cubes as well.
2. Heat some vegan butter in a large pot and fry the onion for 5 minutes.
3. Drain the jackfruit. Add the remaining vegetables and jackfruit to the onion and fry for another 2 minutes.
4. Add the tomato paste, sugar and all the spices. Deglaze with red wine and vegetables stock. Cover and let simmer for 35 minutes.
5. With a fork, rip the jackfruit pieces apart.
6. Season to perfection with salt and pepper. Last add the fresh parsley.
