Spinach Feta Quiche

Quiche is always a good idea and the perfect picnic dish. This one is full of taste due to the feta and the juicy tomatoes.

Preparation Time: 20 mins

Cooking Time: 45 mins

Total Time: 65 mins

Servings: 2-4 people

Portion: 1 quiche



1 puff pastry

50 g pine nuts

300 g spinach

2 garlic cloves

4 spring onions

15 cherry tomatoes

3 eggs

50 ml milk

50 g gouda or parmesan

150 g feta cheese

paprika powder






1. Preheat the oven to 190°C.

2. Roast the pine nuts in a pan until they are golden brown. Save them for later.

3. Finely chop garlic and spring onions. Halve cherry tomatoes.

4. Heat some olive oil in a pan, fry garlic and spring onions for 3 minutes. Gradually add the spinach, season with salt, pepper and nutmeg. Cook until it has shrunken.

5. Grate parmesan/gouda and cut feta into small cubes. Whisk the eggs with the milk, season with salt, pepper and paprika powder. Add the pine nuts and cheese to the mixture.

6. Grease a tart pan, cover with flour and lay it out with puff pastry.

7. Cover the puff pastry with the cooked spinach, pour over the cheese-egg mixture and top with cherry tomato halves.

8. Bake for 40-45 minutes.
