You will love this sweet potato curry, it is so easy but so delicious! Serve it with fresh naan or some basmati rice.

Ingredients
300 g sweet potatoes
5 cm ginger
4 cm fresh turmeric
2 garlic cloves
1 tbsp tomato paste
1 tin tomato cubes
1 tin coconut milk
1 tin chickpeas
200 g spinach
salt
pepper
Method
1. Peel the sweet potatoes and cub them into small cubes.
2. Peel the ginger and fresh turmeric, and finely grate both.
3. Finely chop the garlic.
4. Heat some oil in a large pan, and fry the ginger, turmeric, and garlic for 3 minutes. Add the sweet potatoes and tomato paste, and fry for another 3 minutes.
5. Deglaze everything with tomato cubes and coconut milk. Let simmer 10-15 minutes until the sweet potato is soft. Add some vegetable stock if you need more liquid.
6. Gradually add the spinach and the chickpeas. Season with salt and pepper.
