Vegan Apple Strudel


One of the most delicious Austrian desserts I know. Unfortunately, vanilla sauce is rarely vegan when you order it in a restaurant, but it so easy to make at home. The perfect dessert for these rainy summer days.

Preparation Time: 20 mins

Cooking Time: 40 mins

Total Time: 60 mins

Portions: 1 strudel

 

Ingredients


800 g apples

75 g raisins

50 g split almonds

1 tsp cinnamon

15 drops rum flavouring

60 g sugar


5 sheets filo dough

2 tbsp margarine


Vanilla Sauce:

500 ml oat milk

15 g vanilla pudding powder

6 tbsp sugar

1 tsp vanilla extract


 

Method


1. Preheat the oven to 200°C.


2. Roast the split almonds in a pan until they are golden brown.


3. Peal the apples and cut them into small cubes. Mix the apples, raisins, roasted almonds, cinnamon, rum flavouring, and sugar in a large bowl.


4. Melt the margarine and spread the filo dough sheets with it. Stack the dough sheets, but make sure that the edges of the individual sheets overlap.


5. Put the topping in the overlapped filo dough sheets and roll into a strudel. Close the tails by wrapping them.


6. Bake the strudel for 40 minutes.


7. Meanwhile, mix 50 ml of the oat milk with the vanilla pudding powder. Pour the mixture into a small pot with the rest of the milk, sugar, and vanilla extract. Bring to a boil while stirring regularly. Let simmer for 3 minutes. Serve with the hot apple strudel.
