Vegetarian « Chicken » Pesto Wrap


I used to love this wrap with reel chicken from a popular British sandwich chain, so I decided to replace the chicken with quorn to show you that you don't always need meat to have great taste! This wrap is absolutely perfect for the warm summer days ahead, and it tastes amazing!

Ingredients


Pesto-"Chicken":

200 g quorn pieces

125 g natural yoghurt

20 g basil leaves

20 g pine nuts

20 g parmesan

1/2 garlic clove

salt

pepper


4 wraps

40 g salad leaves (e.g. rocket)

1 large tomato

20 g pine nuts

 

Method


1. Put the natural yoghurt, basil leaves, pine nuts, parmesan and garlic clove into a food processor, and mix until smooth. Season with salt and pepper.


2. Add the quorn pieces to the pesto sauce and refrigerate for 30 minutes (optional). If you want, you can also pan-fry the quorn pieces before adding them to the sauce.


3. Cut the tomatoes into slices.


4. Roll the wraps: Put some salad leaves on the wrap, top with tomato slices, pine nuts and the pesto chicken. Roll tight.
