Pesto Rosso

This tomato pesto is incredibly creamy. Make your own red pesto instead of buying it, it is so much easier than you think. I have also reduced the fat content of the pesto by adding some water instead of only olive oil. You can eat it with fresh pasta or use it as a bread topping.

Ingredients


150 g sun-dried tomatoes

(drained)

1 garlic clove

50 g pine nuts or cashews

5 tbsp olive oil

5 tbsp water

50 g parmesan

1 handful fresh basil

1 tbsp tomato paste

pepper

 

Method


1. Roast the pine nuts in a pan until they are golden brown.


2. Meanwhile, roughly chop the garlic, parmesan, and sun-dried tomatoes.


3. Put all the ingredients into a food processor and blend until the mixture is smooth.
