These pastries are absolutely amazing. For breakfast, afternoon tea or dessert, everybody will love these. My grandma has tons of red currants in the garden, therefore I came up
with this idea.
Preparation Time: 20 mins (+1.5h)
Cooking Time: 10-15 mins
Total Time: 30-35 mins (+1.5h)

Portions: 20 pastries
Ingredients
Dough:
42 g fresh yeast
100 m milk
45 g sugar
200 g butter
4 eggs
750 g white flour
1 pinch salt
1 pack vanilla sugar
Crumble:
150 g sugar
200 g white flour
150 g butter
1 pack vanilla sugar
325 g red currants
Icing:
100 g icing sugar
2-3 tbsp water
Method
1. Crumble the yeast into the milk and add the sugar. Let sit for 10 minutes.
2. Gradually add the eggs, and then the flour. Melt the butter, vanilla sugar and salt, and knead into a soft dough. Let rise for 1 hour.
3. Meanwhile, prepare the crumble. Put all the ingredients into one bowl and crumble with your fingers. Save in the fridge for later.
4. Preheat the oven to 190°C.
5. Divide the dough into 20 equal pieces. Put on a baking tray. Top each piece with some red currants and crumble. Let rise for another 30 minutes.
6. Bake the pastries for 10-15 minutes. Let them cool.
7. Mix the icing sugar with water. Top the pastries with the icing.
