This creamy pasta dish is traditionally made with bacon which is replaced by sun-dried tomatoes. Did you know that traditional carbonara does not contain any milk, cream or cream cheese?

Ingredients
230 g spaghetti
3 fresh eggs
100 g parmesan
15 sundried tomatoes
salt
pepper
Method
1. Finely chop or slice the garlic. Drain the sundried tomatoes and cut them into slices.
2. Grate the parmesan. In a large bowl, mix parmesan and the whisked eggs (make sure the eggs are fresh). Season with enough salt and pepper.
3. Fry the garlic and sundried tomatoes for 3-5 minutes and add to the egg mixture.
4. Meanwhile, cook the pasta according to instructions.
5. Gradually and while stirring, add 5 tbsp of hot pasta water to the egg mixture to avoid the egg from coagulating. Then add the pasta.
6. Serve with freshly grated pepper and parmesan.
